Ingredients
6 Large Eggs — Grade A, ideally 7-10 days old for easier peeling
4 cups Cold Tap Water — enough to cover eggs by 1 inch
1 tsp Baking Soda — raises water pH to loosen shells
2 cups Ice Cubes — for ice bath
1 tsp Kosher Salt — optional, helps seal any minor shell cracks
Equipment
Saucepan with Lid
Slotted Spoon
Bowl for Ice Bath
DirectionsGet to the point
1Place 6 large eggs in a saucepan and cover with cold water by 1 inch.
2Bring to a rolling boil over high heat, then cover and reduce to gentle boil.
3Boil covered for exactly 12 minutes for firm, non-chalky yolks.
4Transfer to ice bath for 5 minutes; peel under cool running water.
Dad pro tip

One-week-old eggs peel dramatically cleaner than farm-fresh ones. The pH inside the shell rises with age and loosens the membrane from the white, so buy your eggs Sunday and boil them the following weekend.

Kid adjustment

Slice and serve with a small dish of ranch or ketchup for dipping. Kids will eat anything you let them dunk.

Reheat

Best eaten cold from the fridge. To warm through without rubberizing the white, submerge a peeled egg in a mug of hot tap water for 3 minutes.
