2Thread 1.5 lbs jumbo shrimp onto DOUBLE skewers (2 per skewer set) for no-spin control.
3Brush shrimp with garlic butter; grill direct heat 2 min per side to opaque and C-shape.
4Off heat, brush with remaining butter and squeeze lemon over immediately.
Dad pro tip

Buy shrimp frozen in a bag — 'fresh' shrimp at the counter were thawed in the back that morning and are older. Frozen 16/20 at Costco is the best shrimp value in America. Thaw in cold water 15 minutes.

Kid adjustment

Skip the smoked paprika for kids and cut cooked shrimp in half so they can be speared with a fork rather than pulled off a skewer. Serve with a small ramekin of cocktail sauce for dunking.

Reheat

Shrimp reheat poorly — always eat within an hour of grilling. Chop leftover shrimp cold into a pasta salad, tacos, or cold shrimp cocktail rather than reheating.
