DirectionsGet to the point
1Cut zucchini into 1-inch coins, peppers into 1-inch squares, onion into wedges.
2Marinate 20 min in 1/4 cup olive oil, 2 tbsp balsamic, 1 tbsp Dijon, garlic, salt.
3Thread veg alternating for color; grill direct 400°F, 6 min per side.
4Pull when char-marked and just-tender; drizzle with remaining marinade to serve.
Dad pro tip

Metal skewers over bamboo, every time. Bamboo splinters, burns at the tips, and needs a 30-minute soak. A $15 pack of metal skewers lasts forever and threads faster.

Kid adjustment

Pull one skewer's worth of veg off after grilling and toss with 1 tbsp ranch dressing in a small bowl. Ranch on grilled veg turns kids into vegetable eaters — this is measured playground data.

Reheat

Grilled veg is best day-of. Chop leftovers small and fold into a scrambled egg or a pasta salad — direct reheat turns them limp and watery.
