Oven Roasted Whole Turkey
A 14-lb bird dry-brined 48 hours, roasted breast-side down for the first hour then flipped, so the white meat stays juicy and the dark meat still hits 175°F.
The pop-up plastic timer that comes in most turkeys is calibrated for 180°F — by the time it pops, your breast is a chalky brick. Yank the pop-up out with pliers before you brine and rely only on your probe.
Carve the breast into 1/4-inch slices and lay flat in a shallow pool of warm chicken stock for 3 minutes before plating. Rehydrated slices are easier for young mouths to chew.
Slice cold, arrange in a shallow dish, pour 1/2 cup turkey broth over the slices, cover with foil, and warm at 325°F for 15 minutes. Never microwave sliced turkey — it turns to shoe leather.
