2 tbsp Apple Cider Vinegar
1 tbsp Honey
1 1/2 tsp Kosher Salt — divided
1 tsp Black Pepper — divided
Equipment
Half Sheet Pan
Sharp Knife
Large Bowl for Tossing
DirectionsGet to the point
1Halve 1.5 lbs baby potatoes; toss with oil, salt, pepper, arrange cut-side down.
2Cut cabbage into 6 wedges; brush with oil-mustard-caraway; add to pan.
3Slice 1 lb kielbasa into rounds; scatter over top with sliced onion.
4Roast 425°F for 30 min; drizzle with grainy mustard sauce to serve.
Dad pro tip

Beef kielbasa is smoky and slightly leaner than pork kielbasa — both work here, but pork gives more rendered fat to glaze the vegetables. If you can find Polish-style krakowska sausage, that's the traditional bone.

Kid adjustment

Skip the caraway seeds and mustard sauce. Roast a small portion of just kielbasa rounds and potatoes separately with only salt and pepper — the cabbage is often the sticking point for kids.

Reheat

Reheat portions on a small sheet pan at 400°F for 8 minutes to re-crisp the potato faces. Microwave works but softens the char that made the original dish worth eating.
