Ingredients
1 1/2 lbs Sirloin Steak — cut into 1/2-inch strips against grain
12 oz Cremini Mushrooms — sliced
1 medium Yellow Onion — diced
4 cloves Fresh Garlic — minced
2 cups Beef Broth — low-sodium
1 cup Full-Fat Sour Cream
2 tbsp Worcestershire Sauce
1 tbsp Dijon Mustard
2 tbsp All-Purpose Flour
1 tsp Sweet Paprika
6 tbsp Unsalted Butter — 4 for skillet, 2 for noodles
12 oz Wide Egg Noodles
1 tsp Kosher Salt
1/2 tsp Black Pepper
2 tbsp Fresh Dill or Parsley — chopped, for finish
Equipment
12-inch Skillet with Lid
Wooden Spoon
Large Pot for Noodles
DirectionsGet to the point
1Sear 1.5 lbs sirloin strips 2 min per side in butter; transfer to plate.
2Cook 12 oz cremini + 1 onion 6 min; add 4 garlic, 2 tbsp flour, 1 tsp paprika.
3Deglaze with 2 cups broth + 2 tbsp Worcestershire + 1 tbsp Dijon; simmer 8 min.
4Off heat, stir in 1 cup sour cream and beef; serve over buttered egg noodles.
Dad pro tip

Use full-fat sour cream, not low-fat. Low-fat sour cream has stabilizers that read as chalky in a hot sauce, and it separates faster if you accidentally return the heat. The 100 saved calories aren't worth it.

Kid adjustment

Add extra broth and skip the Dijon for kids' portions — the mustard sharpness reads as spicy to some young palates. Ladle over noodles and top with a small pile of shredded cheddar.

Reheat

Reheat gently in a skillet over medium-low for 6 minutes with 2 tbsp beef broth to loosen. High heat will curdle the sour cream and give you a grainy, split sauce.
