One-Pan Skillet Chicken Alfredo
Seared cubed chicken tossed with a silky parmesan cream sauce and fettuccine that cooks right in the pan — no colander, no second pot.
The liquid-to-pasta ratio is precise: 4 cups liquid to 8 oz pasta, no more, no less. Do not eyeball it. Too little liquid and the pasta scorches on the pan bottom; too much and the sauce stays thin and watery. Measure it every time.
Skip the black pepper garnish and cut the chicken into smaller 1/2-inch cubes so pieces fork up alongside pasta easily. Toss in a handful of frozen peas in the last 3 minutes for color and a vegetable win.
Reheat in a skillet over medium-low heat with 2-3 tbsp milk or cream stirred in to loosen the sauce. Stir constantly. Microwaving works in 30-second bursts with stirring between, but the stovetop keeps the texture right.
