Step-by-Step Guided Instructions
In the Instant Pot inner pot, whisk together 1/3 cup low-sodium soy sauce, 1/4 cup water, 3 tbsp honey, 2 tbsp brown sugar, 1 tbsp rice vinegar, 1 tsp sesame oil, 3 minced garlic cloves, and 1 tsp grated fresh ginger.

Submerge 2 lbs boneless skinless chicken thighs into the sauce mixture, turning once so both sides are coated.
