3-Step Execution Protocol

1
Preheat & Prep

Preheat grill to Two-zone: 350°F indirect first, then 500°F direct to colour. Clean and oil grates. Prepare fresh bratwurst (uncooked pork sausage) (5–6 oz raw fresh brats, casings intact and unpricked).

2
Cook & Flip

Cook for 18–22 mins (indirect first, hard sear last). Flip at the 8-minute mark for even browning.

3
Check & Rest

Casing is taut and springs back when pressed with a thumb; a probe at the fattest point reads 160°F. Confirm internal temperature reaches 160°F (71°C) — USDA safe minimum for fresh pork sausage. Rest for 3 minutes before serving.

Verification Basis & Testing Rig

USDA FSIS 160°F safe minimum for fresh (uncooked) pork sausage; casing-integrity guidance from the Wisconsin Milk Marketing Board bratwurst handling notes and the National Hot Dog & Sausage Council technical bulletin.

Pro Tip: Cook indirect until the internal temp is around 150°F, then move to direct heat for a hard 2–3 minute sear to colour the casing. Grilling brats over full direct heat from the start splits the casings, dumps the fat into the fire, and gives you black-outside/raw-inside sausage that everyone politely eats one bite of. Do not prick the casings — piercing them drains the fat that keeps the interior juicy.
