Preheat grill to High direct heat, 500°F (260°C) grate. Clean and oil grates. Prepare jumbo shrimp skewers (16/20 count, peeled) (1 lb 16/20-count peeled, deveined shrimp, threaded through both head and tail on double bamboo skewers so each shrimp is locked flat).

Cook for 4–6 mins total (2–3 min per side, single flip). Flip at the 2-minute mark for even browning.

Pro Tip: Double-skewer the shrimp — one skewer through the tail, a second parallel skewer through the head — or every shrimp spins in place when you try to flip and half of them cook on one side only. Do not marinate in citrus for more than 15 minutes; the acid starts to cure the flesh (ceviche) and it turns mushy on the fire.
