Pro Tip: The grain of a tri-tip changes direction: the fibres in the thick end run at a roughly 45° angle to the fibres in the tail. Cut the roast in half through the middle first, then slice each half against its own grain — one cutting board direction leaves half the roast chewy no matter how well you cooked it.
