Pro Tip: Turkey drumsticks are 3–4x the mass of chicken drumsticks with a lot more connective tissue — 175°F is the minimum for a tender bite because dark meat with that much collagen genuinely doesn't break down until 175°F+. Pulling at 165°F gives you rubbery, hard-to-eat turkey legs.
