Dice 1 large ripe mango, 1/4 cup red onion, 1 jalapeno (seeded), and 2 tbsp fresh cilantro. Combine in a bowl with the juice of 1 lime and a pinch of salt. Toss and set aside.
Make the salsa first so the flavors have time to meld while you grill the fish.
Pat 4 mahi mahi fillets (6 oz each) completely dry. Brush both sides with 1 tbsp olive oil. Season with 1 tsp kosher salt, 1/2 tsp black pepper, and 1/2 tsp ground cumin.
