Step-by-Step Guided Instructions
Preheat oven to 400°F. Dice 3 russet potatoes into 1/2-inch cubes and 1 red bell pepper into bite-sized pieces. Toss on a rimmed sheet pan with 2 tbsp olive oil, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1 tsp kosher salt, and 1/2 tsp black pepper.
Cut potatoes small (1/2-inch) so they cook and crisp rapidly in the oven without needing boiling.
Pinch 1/2 lb raw bulk breakfast sausage into bite-sized chunks and scatter evenly across the pan amongst the potatoes. Roast at 400°F for 15 minutes, stirring once with a spatula at 8 minutes.
Scattering raw sausage nuggets allows their seasoned fat to render and crisp the potato cubes.
