Preheat oven to 400°F (204°C). Arrange bone-in pork chops with apples & onions (4 × 1-inch bone-in center-cut pork chops on a bed of 2 sliced apples and 1 sliced onion) on a parchment-lined sheet pan in a single layer.

Cook for 20–24 mins. Do not flip; allow surface to develop undisturbed.

A probe in the thickest part of the chop, not touching bone, reads 145°F; apples have collapsed into a jammy layer and the onions have gone translucent with browned edges. Confirm internal temperature reaches 145°F (63°C) with a 3-minute rest. Rest for 3 minutes before serving.

USDA FSIS lowered the safe pork minimum to 145°F with a 3-minute rest in 2011 (from 160°F previously); this datasheet reflects the current standard. Cook time is calibrated to 1-inch bone-in chops at 400°F — thinner chops finish 4–5 minutes sooner.
