Preheat & Prep

Preheat smoker to 250°F (121°C) with your choice of wood. Prepare smoked beef back ribs (2 racks beef back ribs (7 bones each, ~2.5–3 lb per rack), membrane pulled, coated in SPG).

Cook for 4–5 hours. Do not flip; allow surface to develop undisturbed.

Bones have arched forward and are exposed by roughly 1/2 inch of pullback; the meat lump between two adjacent bones jiggles independently when the rack is shaken. Confirm internal temperature reaches 203°F (95°C) probe tender in the meat between bones. Rest for 20 minutes before serving.
