3-Step Execution Protocol
Preheat smoker to 225°F (107°C) smoke / 400°F (204°C) crisp with your choice of wood. Prepare crispy smoked chicken wings (2–3 lb party wings (flats and drumettes), patted completely dry).
Cook for 75 mins (60 min smoke + 15 min high heat). Flip at the 60-minute mark for even browning.
Skin blisters and sizzles under high heat; renders cleanly with no rubbery bite. Confirm internal temperature reaches 175°F–185°F (rendered and crispy). Rest for 5 minutes before serving.
Tested on Traeger Pro 575 with ThermoWorks Thermapen One; USDA FSIS 165°F minimum.
