How Long to Cook Whole Chicken (Spatchcocked) in the smoker
Specification: 4–5 lb whole fryer chicken, backbone removed and flattened
3-Step Execution Protocol
Preheat smoker to 225°F (107°C) smoke / 375°F (191°C) crisp finish with your choice of wood. Prepare whole chicken (spatchcocked) (4–5 lb whole fryer chicken, backbone removed and flattened).
Cook for 2–2.5 hours. Do not flip; allow surface to develop undisturbed.
Skin is amber-bronze and crackling; juices from thigh run crystal clear. Confirm internal temperature reaches 165°F (74°C) breast / 175°F (79°C) thigh. Rest for 15 minutes before serving.
Tested on Camp Chef Woodwind 24 with ThermoWorks Thermapen One; USDA FSIS 165°F poultry standard.
