3-Step Execution Protocol
Preheat smoker to 250°F (121°C) with your choice of wood. Prepare smoked beef short ribs (dino ribs) (3-bone chuck or plate short ribs (4–6 lbs), fat trimmed to 1/4 inch).
Cook for 8–9 hours. Do not flip; allow surface to develop undisturbed.
Bones protrude 1 to 1.5 inches; probe slides in between bones with zero resistance. Confirm internal temperature reaches 203°F–205°F (probe tender like warm butter). Rest for 45 minutes before serving.
