3-Step Execution Protocol
Preheat smoker to 225°F (107°C) with your choice of wood. Prepare baby back pork ribs (2-2-1 method) (2.5–3 lb loin back ribs, membrane stripped, dry rub coated).
Cook for 4.5–5 hours (2h smoke, 2h foil, 30-60m glaze). Flip at the 120-minute mark for even browning.
Meat pulls back 1/2 inch from bone ends; rack bends with small cracks in surface bark. Confirm internal temperature reaches 198°F–203°F (probe tender). Rest for 15 minutes before serving.
Tested on Traeger Pro 575 at 225°F (107°C); USDA FSIS 145°F minimum, 195-205°F tender rib standard.
