Step-by-Step Guided Instructions
Remove the thin membrane from the bone side of 2 racks baby back ribs by sliding a butter knife under it and pulling with a paper towel. Mix 1/4 cup brown sugar, 2 tbsp smoked paprika, 1 tbsp each garlic powder, onion powder, chili powder, and cumin, 2 tsp black pepper, 1 tsp salt, and 1 tsp mustard powder. Coat both sides generously with the dry rub.
Removing the membrane is non-negotiable. It blocks smoke and seasoning from penetrating the meat and turns rubbery when cooked.
Preheat smoker to 225°F (107°C). Place ribs bone-side down on the grate. Smoke for 3 hours, spritzing with apple juice from a spray bottle every 45 minutes to keep the surface moist.
Use a mild fruitwood like apple or cherry for baby backs. Hickory and mesquite can overpower pork at this long cook time.
Lay out two large sheets of aluminum foil. Place each rack meat-side down. Add 2 tbsp butter, 2 tbsp brown sugar, and a splash of apple juice to each packet. Wrap tightly and return to the smoker at 225°F for 2 hours.
The foil wrap braising step is what takes ribs from tough to fall-off-the-bone. The butter and sugar create a caramel layer underneath.
Carefully unwrap the ribs and place back on the grate bone-side down. Brush generously with your favorite BBQ sauce. Smoke for 1 final hour at 225°F until the sauce is sticky and set. Internal temp should read 195-205°F between the bones. Rest 10 minutes, then slice between the bones.
If the sauce is not tacky after an hour, bump the heat to 275°F for the last 15 minutes to help it set without burning.
The 3-2-1 method is foolproof even for first-timers. Three hours of smoke for flavor, two hours wrapped for tenderness, one hour sauced for that sticky bark. Follow the numbers and you cannot mess it up.
