3-Step Execution Protocol

1
Preheat & Prep

Add baby back ribs (pork) (1 rack baby back ribs, membrane removed, dry rub, coiled in pot, 1 cup apple cider or water) to the Instant Pot inner pot. Seal the lid and set the valve to Sealing. Select High Pressure (239°F / 115°C) for 25–30 mins.

2
Pressure Cook

Cook at High Pressure (239°F / 115°C) for 25–30 mins. Use 10-minute natural release.

3
Check & Rest

Meat pulls back from the bones about 1/4 inch; ribs bend easily when lifted with tongs; bite-through tender without falling off the bone. After 10-minute natural release, carefully open the lid away from you. Let stand 10 minutes before serving.

Verification Basis & Testing Rig

Instant Pot Duo 6-Qt (IP-DUO60); USDA pork collagen render point 190–205°F; tested with St. Louis and baby back cuts.

Pro Tip: After pressure cooking, brush with BBQ sauce and broil 3–4 minutes for caramelized, sticky glaze. Remove the membrane before cooking or ribs will be chewy.
