Pro Tip: Standalone brisket points are hard to find in most grocery cases — call the butcher counter and ask for a "brisket deckle" or "the point half of a packer." A whole packer brisket also works: separate the point from the flat along the fat seam once the whole cook hits 195°F, then cube the point and finish the flat as regular sliced brisket.
