Preheat smoker to 250°F (121°C) with your choice of wood. Prepare smoked pork belly burnt ends (3–4 lb skinless pork belly cubed into 1.5-inch squares and dry rubbed).
Cook for 4.5–5 hours (3h smoke + 1.5h braise & glaze). Flip at the 90-minute mark for even browning.
Cubes are squishy like marshmallows and coated in tacky, caramelized barbecue glaze. Confirm internal temperature reaches 203°F–205°F (rendered and melt-in-mouth). Rest for 15 minutes before serving.
