How Long to Cook Hot Smoked Salmon Fillet in the smoker
Specification: 1.5–2 lb skin-on salmon fillet, dry brined and pellicle dried
3-Step Execution Protocol
Preheat smoker to 200°F (93°C) with your choice of wood. Prepare hot smoked salmon fillet (1.5–2 lb skin-on salmon fillet, dry brined and pellicle dried).
Cook for 1.5–2 hours. Do not flip; allow surface to develop undisturbed.
Lacquered surface pellicle; white albumin beads lightly and fillet flakes gently. Confirm internal temperature reaches 135°F–140°F (flaky and moist). Rest for 10 minutes before serving.
