Step-by-Step Guided Instructions
Thoroughly pat 4 bone-in, skin-on chicken thighs dry with paper towels. Mix 1 tsp garlic powder, 1 tsp smoked paprika, 1/2 tsp onion powder, 1 tsp kosher salt, and 1/2 tsp black pepper. Rub all over thighs, getting under skin edges.
Moisture is the enemy of crispy skin. The drier the chicken skin is before cooking, the louder it crunches.
Place thighs skin-side DOWN in the air fryer basket. Cook at 380°F for 12 minutes.
Starting skin-side down cooks the bottom meat through while rendering fat from the skin downward.
Flip thighs skin-side UP with tongs. Air fry for an additional 10 minutes at 380°F until skin is mahogany brown and blistering.
Finishing skin-up subjects the rendered skin to direct high-velocity convection air for glass-like crunch.
Check internal temperature at the bone with an instant-read probe — target 180°F–185°F. Rest on a cutting board or wire rack for 5 minutes before serving.
Dark meat thighs taste best at 180°F+ where tough connective tissue melts into rich gelatin.
Always start bone-in thighs skin-side DOWN. If you cook skin-side UP the whole time, the fat won't render completely and the skin turns chewy instead of glass-crisp.
Remove the bone and slice the crispy thigh meat into strips for toddlers.
